Roasted Polenta and Veggies

Tonight I set the oven at 450 degrees and roasted asparagus, a carrot, brussels sprouts and polenta. The polenta is awesome that way.

I also made vanilla tofu pudding from Everyday Food April 2006. It's a great little magazine.

I accidentally ate too much what with the stupid cookie I keep buying at work, so I feel like crap, but without the cookie I think I would have been great. Need to focus on that.

This is also Day 2 of the Detox. I hope this stuff works. Pink tongue, here I come!
