Chopped Greek Salad with Feta and Olives
1 T red wine vinegar
1 t dried oregano
1 clove garlic, crushed through a press
1/4 C extra-virgin olive oil
2 large, ripe tomatoes, seeded and diced
1 medium green bell pepper, diced
1/2 a long, seedless (hothouse) cucumber, diced
2 scallions, coarsely chopped
1/2 C crumbled feta cheese
1/3 C chopped, pitted kalamata olives
1/4 t salt
Freshly ground black pepper to taste
1. Pulse vinegar, oregano and garlic in a blender to combine. With machine running, pour oil through top vent.
2. Put remaining ingredients into a medium bowl, add dressing and toss gently to mix and coat. Cover and refrigerate until chilled.
Per serving: 158 cal, 3 g pro, 7 g car, 2 g fiber, 14 g fat, 10 mg chol, 362 mg sod.
