Cranberry-Almond Carrot Salad
25 Minutes Prep Time * Serves 4
8 carrots, grated
1/2 C fresh basil, coarsely chopped
2 Tbsp raw olive oil
1/4 C dried cranberries
1/4 C almonds, crushed
1/2 lemon, juiced
1/2 tsp sea salt
1. Mix all ingredients in a bowl.
2. Wait 15 minutes before serving to allow time for the flavors to seep throughout the dish. Serve
